A brief definition: What are anthocyanins?

Anthocyanins are water-soluble plant pigments that belong to the flavonoid group. Simply put, anthocyanins are responsible for the deep red, blue and purple tones that we see in many berries and fruits, as well as vegetables and flowers. In the plant world, however, these pigments not only serve as colorants, but also provide plants with additional protection against UV rays and pests.

In principle, there are a variety of foods that contain anthocyanins. A clear indication is a dark, intense color. The best known sources include
